"A LOVE OF THE KNOWLEDGE OF OLIVE OIL"
The production concepts of Extra Virgen Olive oil should be clear in defining what to do in order to achieve the goal proposed by OLIOVALLE. This is olive oil production of the highest quality.
A quality chain considers the following three aspects: Orchard (Terroir, varieties (varietals), management, harvesting and transportation), Olive oil Factory (Extraction system, temperature, time and oxygenation), Preservation (ponds, temperature, controlled atmosphere and lack of light).
These three fundamental pillars are nowadays the base of this company’s production in which I advised until 2008 harvest. Therefore, this company with its brand “Olivares de Rossi” and its Premium Blend oil , offers to the market the highest quality of olive oil.
In Mediterranian countries the yields are rather low, because most of the olive trees are grown in dry land. In our country we have achieved yields from 12 to 15 thousands kilograms per hectare (1,800 to 2,000 liters of olive oil per hectare) based on modern fruit growing concepts and low irrigation, in suitable regions or zones and with the varieties appropriately chosen, has been possible to see differences among the different zones or regions where olive trees are grown, specially the mixture of Terroir in each variety. Therefore special care or treatment must be implemented. |

It is important to note that under a system of high quality production, “the zoning” is an important and well defined criterion.
Since there are zones, places or areas that have better conditions in comparison to others and that can generate different qualities of olive oil (different intensities of fragancies; spicy and bitter with clear sensory descriptors)
Chile should seize the unique advantages it possesses, an oasis of fitosanitary amid an ocean of problems related to plagues, pests and adverse climates.
That is the reason why volume is not Chile’s business in comparison to Argentine and Spanish models of volume business. Therefore both our resources and efforts must be focused on quality reaching 100% production on each project of high quality extra virgin olive oil. |

National Situation and the projection that owns the Limari Valley
Chilean Olive growing has changed from traditional to modern and efficient systems, in which entrepreneurs have been able to assess the olive oil business as a dynamic and profitable growing system in Chilean agriculture.
The outstanding characteristics of the zone , its excellent Terroir, the water availability, in addition to selected varieties can make olive oil a stand alone product of the highest quality and that at the same time can be positioned as a very good olive oil containing special characteristics.
To achieve this goal the olive tree must be handled under canons governing any intensive crop and requires planning and professionalism where the resources are optimized and yields and quality are maximized.
The initial investment and the type of business raised must generate the necessary productive bases for self-sustenance and its projection.

Knowing that the orchard “Agricola Olivinicola Oliovalle Limitada” was at stage of incipient development, and as a specialist on olive growing with experience in the development of demanding projects in the fourth Region (Valle Qulimari-A. Giangrandi; Las Agustinas – P. Matte: Valle Arriba- G. Cardemil, among others) I accepted to be in charged of the guidelines to convert OLIOVALLE into an olive growing nucleus defined by the quality of its agronomic processes and in its clear vision and agro industrial mission.
