Recommendations: It is recommendable to fry foods at temperatures of about 185oC. When fried, olive oil starts to smoke at about 210oC, our recommendation is to maintain cooking temperatures below this. Olive oil does not degrade as rapidly as other oils when re-heated. This allows you to re-use the oil if it is filtered after its use and stored in a sealed glass container. A glass container is recommended over a plastic one since the oil can absorb PVC. It is not recommended to fry foods of delicate flavor in re-used oil since the oil will maintain the aroma and taste of the original food. |
