Olive oil can be used in innumerable ways in the kitchen:

° It can be sprinkled over stews, soups, gazpachos, bean purés, etc. to give these a touch of flavor.

° It can obviously be used on salads of any type, this is possibly the best way to appreciate its exceptional aroma and flavor.

° Use it, as a healthier alternative, to replace butter or margarine in the confection of cakes and pies (1 cup of butter is equivalent to approximately ¾ of a cup of olive oil)

° It can also be used instead of butter in the preparation of red and white meats, be it on the grill or on the stove-top. It is also an excellent ingredient to use when preparing sauces.

° When frying it is best to use it at high temperatures to avoid that the food absorb too much oil.  In this way, the food will remain crunchy on the outside while being cooked on the inside.
Recommendations:

It is recommendable to fry foods at temperatures of about 185oC. When fried, olive oil starts to smoke at about 210oC, our recommendation is to maintain cooking temperatures below this.  Olive oil does not degrade as rapidly as other oils when re-heated.  This allows you to re-use the oil if it is filtered after its use and stored in a sealed glass container. A glass container is recommended over a plastic one since the oil can absorb PVC. It is not recommended to fry foods of delicate flavor in re-used oil since the oil will maintain the aroma and taste of the original food
